My mother, who is the connoisseur of finding raw food and vegan recipes, sent me one for vegan chocolate.
Vegan chocolate? Is there even such a thing as-
Yup.
But can you make vegan chocolate without-
Yup.
Here’s the basic recipe-
You’ll need:

* 1/4 cup of coconut oil melted
* 1/4 cup of cocoa powder
* 3 tablespoons of maple syrup
* chocolate molds
You will need to:
Add melted oil and maple syrup into a bowl and stir. Add cocoa powder and stir until smooth.

Simple.
But….
Here’s what I did:
I decided to add some flavor. So I split the mixture into 3 parts.
Part 1- I added 2-3 teaspoons of vanilla extract.
Part 2- I added 2 1/2 tablespoons of paprika
Part 3- I added 1/2 tablespoons maple extract and 1/4 cups of walnuts crumbled.
Parts 1 and 2, I put into the molds. Part 3 I spread on baking sheets and tried to make chocolate bark.



So a word on consistency, go slow. Too much extract can change the consistency of chocolate (see the maple walnut bark above). A little at a time is good.
Likewise, with the Paprika, I like a spice in my life but it’s not for everyone, so add a little at a time.
Put the chocolates in the fridge to set.

Delicious! But my favorite? Paprika by far.
Fair warning that this is a dark chocolate recipe for all you bitter hearts out there.
